75 Calorie Carrot Cake Muffins

This carrot cake is just so yummy & moist! Who would believe it was only 75 calories each (give or take! lol) As you may have noticed, I hardly use frosting for my cakes or muffins & that saves a TON of calories & carbs. Below is the recipe & the nutritional information (was rated a B+ over at Calorie Count) based off of 1 cupcake! 


Ingredients:


2/3 cup whole wheat flour
3/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp ginger
2/3 cup stevia
1/3 cup unsweetened applesauce
1/3 cup plain yogurt (I used Greek)
1 cup grated carrots
1/4 cup walnuts
1/4 cup raisins

Mix all the ingredients & bake at 350 degrees F for 26-28 minutes. Easy peasy! By the time the oven has preheated, you're done mixing & filling the cupcake tins. This recipe makes 10 cupcakes. If you want to turn it into a cake form, just double the recipe.
