Baked Cauliflower

This has got to be one of my favorite side dishes! It leaves the cauliflower nice & crunchy to where you forget that you're eating healthy. 

Ingredients: 

2 cups fresh cauliflower (if using frozen, defrost first) 
1 tbsp olive oil 
1 tsp of nutmeg 

Combine ingredients into a glass dish & bake at 450 degrees F for about 30 minutes.
